You Can Put Them in a Pie-aye

For years Jon said he didn’t like banana bread. Ends up that was only because he hadn’t tried mine yet.

 

Banana Bread

Preheat oven to 350.

1/4 cup shortening

1 cup light brown sugar

1 egg

3 over-ripe bananas, mashed

2 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

Cream the shortening.

Add the sugar and egg and combine well.

Add half of flour plus soda and salt to the shortening mixture.

Add half of the bananas.

Add the rest of the flour.

Add the rest of the bananas.

Pour into bread pan.

Sprinkle some chocolate chips on top if that makes you happy.

Bake 40 minutes/until toothpick comes out clean.
