This is one of those foods that doesn’t look super appetizing while you’re making it, but ends up tasting so good you don’t mind.
Chickpea Patties
2 cans chickpeas
1 cup oats, chopped ( I use a mezzaluna, but I’m sure a food processor would work as well.)
1/2 cup buffalo sauce
2 eggs whites, whipped
1 large onion, grated
2 teaspoons garlic powder
Mash the chickpeas until they’re mostly pasty, with a smaller amount still whole or in large pieces.
Add all ingredients to chickpeas and stir to combine thoroughly.
Spray a skillet with oil.
Drop chickpea mixture onto skillet in 1/3 cup measures. I use a round, flat measuring cup, which gives me perfectly shaped patties. If yours does not, just pat them down with the back of a spoon until they’re the shape you’d like.
Cook over medium heat for 5-7 minutes per side, til golden brown.
We like to eat these on buns with homemade ketchup. That’s a recipe for another day.
I’ve never heard of buffalo sauce. Looking it up, sounds like I could use any type of spicy barbecue sauce?
Yes, I’d think any one you like would do.
