It’s possible I have more strawberries than I know what to do with.
1 2/3-2 cups strawberries
2/3 cup sugar
1/3 cup vegetable oil
1 cup white flour
1/2 cup wheat flour (if you only have white, that’s fine. Just use 1 1/2 cups of it total.)
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
Preheat oven to 450.
Smash strawberries in large bowl.
Add sugar, vegetable oil, and eggs and stir thoroughly.
Add flour, soda, salt, and cinnamon and stir til moistened.
Bake in muffin cups 15 minutes.
