In a Nutshell

Should you find yourself with a plethora of garlic scapes (and you should, you really should), here’s what to do:

Chop up one cup of scapes and put them in a blender.

Add:

1 cup olive oil

1/2 cup walnuts

1 cup grated Parmesan

1 Tablespoon lemon juice

1 teaspoon salt

Give it a whirl til it’s smooth and serve it over pasta.

(Note: I can’t stand walnuts. In this recipe, they work. I think the key is that they don’t stand a chance against the flavor of the scapes.)
