Today’s deliciousness: Jam Bars.
While I would prefer to make these with my sister’s homemade raspberry jam, that doesn’t last long enough at our house to make it into any recipe.
So, Polaner’s it is. And I have to admit, it’s spoon-licking good.
Jam Bars
1 cup flour
1 cup oats
1/2 cup light brown sugar
1/4 teaspoon baking soda
1/8 teaspoon salt
1/2 cup butter, slightly softened
3/4 – 1 cup jam
Preheat oven to 350. Yes, I know it’s summer. These are good.
Combine dry ingredients.
Work the butter into the dry ingredients. The best, but grossest, way to do this is to use your hand. Just think, someone somewhere is probably paying big bucks for an oatmeal moisturizing treatment. And they don’t even get a snack when they’re done!
Press 2 cups of mixture into a square pan. (I haven’t had any problem with sticking – there’s lots of butter in the recipe – but if your pan tends to be sticky you may want to grease it.)
Spread jam on top.
Sprinkle remaining mixture over jam and press down lightly with fingers.
Bake for 35 minutes, til lightly browned.
