Wouldn’t it be lovely if while we were sleeping elves came and baked all sorts of treats for us?
Hmm…maybe not. For me, the mixing and folding and measuring is half the sweetness.
Fruit Cobbler
Enough fruit to comfortably spread in a 9″ x 13″ pan
Spices that seem appropriate for the variety of fruit you have
1/2 cup sugar + 1 cup sugar (separately – 1/2 cup on fruit, 1 cup in batter)
1 cup flour
1 cup milk
1/2 Tablespoon baking powder
dash salt
1 stick butter
Heat your oven to 350. Place the stick of butter in the 9″ x 13″ pan and set it in the oven to melt.
Cut up your fruit. Add 1/2 cup sugar and whatever spices you like. My most recent cobbler was full of peaches from our tree, plums from a neighborhood farm, and strawberries from our yard. I seasoned with cinnamon, a bit of ginger, and a dash of nutmeg.
Mix 1 cup sugar, flour, milk, baking powder, and salt.
Take the pan out of the oven.
Layer the batter over the butter.
Layer the fruit over the batter.
Bake 30-45 minutes, until golden brown.
