Let the Chips Fall Where they May

When you crave something dense and chocolaty, zucchini probably doesn’t come to mind.

Add a few choice ingredients, though, and you’ve got a bread worthy of being called a cake.

Chocolate Zucchini Bread

Preheat oven to 350.

2 cups flour

1/2 cup cocoa powder

1 cup sugar

2 teaspoons baking powder

1/2 teaspoon salt

2 large eggs

1/3 cup vegetable oil

3/4 cup buttermilk

1 teaspoon vanilla

1 1/4 cups zucchini, shredded

1 cup chocolate chips

Mix flour, cocoa powder, sugar, baking powder, and salt.

Mix eggs, oil, buttermilk, and vanilla.

Combine the dry ingredients with the wet mixture.

Add zucchini and chocolate chips.

Bake 40-45 minutes in a buttered 9″x5″ bread pan.
