Pop Over Anytime

A popover (or two) is tasty at any time of day.

Popovers

4 Tablespoons butter

3 eggs

1 1/4 cups milk

1 1/4 cups flour

1/2 teaspoon salt

Put a small pat of butter – about 1/3 of a Tablespoon – in each of 12 muffin cups.

Place the muffin pan in the oven and set the heat to 375.

Whisk the eggs and milk together, then add the flour and salt and whisk til fairly well combined.

Assuming your butter has melted, remove the pan from the oven and fill each of the muffin cups 3/4 of the way.

Bake for 30 minutes.

Remove from pan immediately and enjoy with whatever topping you might like. Jam, apple butter, Nutella, and butter with maple syrup are go-to choices for us.

  1. These are Yorkshire puddings in the UK. They’re traditionally eaten with roast beef or with sausages; then they’re known as “toad in the hole”. I didn’t know there was a US version!
