Every time I closed my eyes last night I saw a giant strawberry. I wish I were kidding, but it’s true.
We’ve gone from two everyday-sized colanders to one everyday-sized and one who-the-heck-are-you-feeding-sized per day.
We’re not all about the strawberries, here, though. Oh, no. After all, we’re still working our way through the scapes. If you are too, I’ve got just the thing for you.
Garlic Scape Hummus
1/3 cup scapes, chopped
1 Tablespoon lemon juice
1 can cannellini beans, rinsed and drained
1/4 cup olive oil
1/2 teaspoon salt
pepper to taste
Toss it all in a blender or food processor and away we go.
